Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Fresh mint and parsley

Instructions

  1. Cook quinoa in water for 15 minutes, let cool
  2. Dice cucumber, halve tomatoes, chop onion
  3. Mix olive oil, lemon juice, salt, and pepper
  4. Combine quinoa with vegetables in large bowl
  5. Add dressing and toss well
  6. Top with feta and fresh herbs
  7. Serve chilled or at room temperature
