Quick Quinoa Salad
Protein-packed quinoa salad ready in 20 minutes
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup feta cheese
- 3 tbsp olive oil
- 2 tbsp lemon juice
- Fresh mint and parsley
Instructions
- Cook quinoa in water for 15 minutes, let cool
- Dice cucumber, halve tomatoes, chop onion
- Mix olive oil, lemon juice, salt, and pepper
- Combine quinoa with vegetables in large bowl
- Add dressing and toss well
- Top with feta and fresh herbs
- Serve chilled or at room temperature
