Protein Pancakes
Fluffy protein pancakes for a healthy breakfast
Ingredients
- 1 banana, mashed
- 2 eggs
- 1/4 cup protein powder
- 1/4 cup oat flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
- Toppings: berries, yogurt, honey
Instructions
- Mash banana in bowl
- Whisk in eggs until combined
- Add protein powder, oat flour, baking powder, cinnamon, and salt
- Mix until just combined (don't overmix)
- Heat griddle to medium heat and lightly oil
- Pour 1/4 cup batter for each pancake
- Cook until bubbles form, flip and cook until golden
- Serve with berries, yogurt, and honey
