Protein Pancakes

Ingredients

  • 1 banana, mashed
  • 2 eggs
  • 1/4 cup protein powder
  • 1/4 cup oat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Toppings: berries, yogurt, honey

Instructions

  1. Mash banana in bowl
  2. Whisk in eggs until combined
  3. Add protein powder, oat flour, baking powder, cinnamon, and salt
  4. Mix until just combined (don't overmix)
  5. Heat griddle to medium heat and lightly oil
  6. Pour 1/4 cup batter for each pancake
  7. Cook until bubbles form, flip and cook until golden
  8. Serve with berries, yogurt, and honey
