Avocado Toast Bowl
Fresh avocado toast with microgreens and seeds
Ingredients
- 2 ripe avocados
- 4 slices whole grain bread
- 2 cups microgreens
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 2 eggs (optional)
- Lemon juice
- Red pepper flakes
- Salt and pepper
Instructions
- Toast bread until golden and crispy
- Mash avocados with lemon juice, salt, and pepper
- Spread avocado generously on toast
- Top with microgreens
- Sprinkle with seeds and red pepper flakes
- Optional: top with a fried or poached egg
- Serve immediately
